Common Name(s): Fennel Botanical Name: Foeniculum vulgare Cultivar: Florence Type: Annual herb Days to Harvest: About 70 Light Requirements: Full sun Water Requirements: Average Height: 30 to 36 inches Spread: 24 to 36 inches Row Spacing: 24 inches Description: This annual is often listed as an herb and though also ornamental it is really the vegetable fennel raised for the overlapping thickened leaf stalks which form a bulb at the base of the plant. With their feathery foliage plants add texture and make a good background for other herbs and ornamentals. They are similar in appearance to dill with clusters of umbrella-shaped, yellow flowers but the stems are solid and have the scent of licorice. Mature height is 36+ inches. Harvest in late summer to fall. Uses: Plants require full sun and an adequate amount of food and water for best production. Use bulbs raw in salads or steamed, stir-fried or baked. An excellent accompaniment to any fish dish. The fern-like tops can be used as a fresh or dried herb to add a licorice-like flavor to foods or tea. Plants have the added benefit of attracting beneficial insects to your garden. Planted near your roses will keep the aphids at bay. Seeds make good tea or can be left for the birds to enjoy! Fennel is a known host for the Swallowtail butterfly. Germination Requirements: Sow direct after danger of frost has passed in spring. Germination occurs in 2-3 weeks under warm (70F), moist conditions.
