The hot pink color along with the bizarre appearance make them look like they weren't produced in nature. The mild sweet pulp is crisp and juicy with crunchy little seeds like in a Kiwi fruit. They are produced on plants that are actually a tropical, climbing cactus. The plants are very vigorous and fast growing clinging to their support with long aerial roots. The enormous and beautiful white flowers bloom at night and are pollinated by bats in their native habitat. On cloudy days they remain open past noon but typically are drooping by nine o'clock. In the US you must hand pollinate for the best fruit production.
