  • 120-150 days. CARDOON is a magnificent perennial native to southern Europe, with spiny, gray-green foliage and purple, thistle-like flowers to five feet tall. It is prized by people from the Mediterranean countries for its unique flavor. The French first grew it as a vegetable and Quakers brought it to America in the 1790's. Although related to Globe Artichokes, the edible part of Cardoon is its thick leaf stalk which can be blanched.
  • It tastes similar to artichoke, celery and salsify. The young tender leaf mid-ribs and immature flower stalks are used. The plant hearts are sometimes blanched like celery stalks (maturing in September). Cardoon may also be eaten fresh and uncooked in salads. The tasty roots are eaten cooked and served as a vegetable.
  • Fast growing shrub. The purple flowers appear during the second year on long stems reaching about 4 feet (1.20 m). Flowers make attractive dried or fresh floral arrangements!
  • Sow in early spring and plant out after last frost in full sun and deep, rich garden loam. Germination is 60%.
