- The carob tree (Ceratonia siliqua) is a Mediterranean native in the Leguminosae family, grows to 33 ft (10 m) tall. The seed pods and seeds are sweet and pulpy, and a common chocolate substitute. Carob trees thrive in USDA planting zones 8 to 11.
- Temperatures below 20 degrees Fahrenheit (-7C) will damage mature trees and kill off saplings. Carob trees like full sun and rocky, well draining soil with a pH range between 6.2 and 8.6. Carob trees have deep tap roots and are drought tolerant.
- Seed Propagation: Rub dried carob seeds between two pieces of sand paper or nick the surface with a sharp knife. Place the seeds in a bowl of water until they swell to about three times their previous size. In a 12-in (30.5cm) deep pot with drainage holes, plant seed 1"-2" (2.5-5cm) deep in fine potting soil.
- Keep warm and in bright light. Plant seeds in the fall or spring. Keep the soil damp but not saturated during germination and first year of growth. Keep seedlings in a greenhouse for the first year. Germination is 2-3 months, depending upon growing conditions.
