Here's one citrus that you literally will not get stuck with! This thornless version of the Mexican lime is also known as the Bartender's Lime and of course the Key Lime of Florida. The blossoms are pure white and fragrant. The fruits are small, approximately one and one-half inches in diameter, and almost round, with a thin, smooth, greenish-yellow rind at maturity that is especially fragrant. The flesh is greenish-yellow, seedy, and highly acidic, with a fine texture. The Mexican lime is more sensitive to cold than the lemon, and can be grown only in protected locations in California. However, it does tolerate drought better than any other citrus fruit. Once Mexican limes are fully ripe, usually in autumn to early winter, they drop from the tree. For a surprisingly refreshing summertime drink, try this recipe: Minty Cucumber Limeade 2 - good sized cucumbers (ends trimmed, but peel still on) coarsely chopped 1/2 cup - fresh Mexican lime juice (from about 5 to 10 limes) 1 1/4 cup - spearmint leaves, stems removed 1/2 cup sugar 1 1/4 cup of water Directions Put ingredients in blender, add enough water to fill 3/4 of blender. Hold the lid on the blender and purée until smooth. Place a fine mesh sieve over a bowl and pour the purée through it, pressing against the sieve with a rubber spatula or the back of a spoon to extract as much liquid out as possible. Fill a large pitcher halfway with ice cubes. Add the juice. Serve with sprigs of mint and slices of lime. Our One Year-Old Trees are generally 12"-16" tall with a trunk diameter of about 1/4".
